Mexican Cuisine
If you enjoy Taco Tuesday, then you have officially fallen in love with the Mexican Food. The main grain of Mexican cuisine is maize. Also known as corn, maize is grown for the past 9000 years after the crop was discovered by the people in Mayan civilization. Mexican empire flourished when they started growing beans, tomatoes, chili pepper, sweet potato and cactus. Till this date these ingredients are used in cooking authentic Mexican dishes and drinks.
Great use of spices, fresh chili pepper dishes like fajitas, tortilla chips, corn chips, salsa, chimichangas, burritos, nachos and quesadillas are invented in America. But when you are looking for authentic Mexican food then you must find a restaurant in the city that serves Rajas con Queso, Garbanzo in a Guajillo Chile Sauce, Pork Filled Chiles Rellenos, Chiles en Nogada, Molcajete Salsa, Pico de Gallo and Frijoles de la Olla. An eye-opening fact – Mexican don't like their food hot. They use fresh chili and other spices to create a flavor that lingers in your mouth.
Mexican food is great for those who are Gluten Intolerant as they use Corn instead of wheat in most of their dishes. Also, you can easily find many beans based Mexican dishes. Another dish which didn't get similar glory as tacos or nachos is the Mexican hot chocolate. If you love something hot on a chilly day, then go for Mexican Hot Chocolate. On merry days, you can enjoy the authentic Mexican Drinks like Tequila, Mezcal, Tecuí, Sotol, Bacanora, Charanda, Posh O Pox, Puebla and Pulque. Mexican Cuisine is for people who enjoy strong drinks and hearty meals.

Am i missing something? Ive found a lot of hole in the wall restaurants pretty good. I dont want to bad mouth this place, but i must be honest. Today was the first time there. From my first impression the place seemed a bit old and junky/dated. The chips and salsa was less then impressive watered down and bland. I ordered a steak burrito with all the trimming. Sad, my food lacked seasoning and was completely bland as well. Overall it wasn't bad, but it wasn't good either. I could have made a better meal at home. On a positive note the staff seemed cordial which is a plus. its priced reasonable. Sad to say i won't be back.

This place is just so amazing! The food is delicious. Also, all the workers there are so family friendly! If you haven't been able to come and eat in this intriguing restuarant than you're missing out!

All Mexican food can be judged in my opinion by their green chili. This place has some off the best. Atmosphere is lacking.

Not sure what to do with this place. The atmosphere and layout are bizarre at best. Are we in a convince store, western outfitter, or restaurant? I am still not sure. The food is terrific and very family friendly staff. We don't go here often, but when we do we are confused and pleased!

Best authentic Mexican in Castle Rock, maybe the county. Hard shell shrimp tacos with homemade shells are amazing!
(5)George B.
Best salsa & chips in Castle Rock, the taco plate is awesome. Very friendly staff, quick service and reasonable prices. A hidden gem in CR.

Popped in for one breakfast burrito, but saw they sold two for $3.99 and Anna told me she could make one for half price. Mexican chorizo and egg was all I wanted. It was really good and spicy. Might have to come back to sample their lunch menu!!

Just yelped to find an inexpensive place to eat and found this gold mine. I can't believe it was empty at lunch time! I had the taco lunch special and was surprised to get the Authentic small tacos. Awesome!
(5)Bryan H.
Really good huevos rancheros. The salsa is awesome. Got a fresh smoothie as well! Very authentic place, it has money transfer services and a store attached if you need some cowboy boots or some Mexican spices, so that's a bonus. One stop shop!

Ambiance is less than desired but the staff are friendly and the food is really good for the money. Do yourself a favor and get take out. Can't be beat!

Love this little place, great food, very traditional Mexican food. Well done, good service and they have a little Mexican grocery store attached with hard to find spices, and fun specialities.

Highly recommend this restaurant! Portions are large and the price is extremely fair... Seems to be very authentic food and very tasty! Will return.

Got some take-out ( carne asada & A chile relleno combo) very fresh tasting and delicious, but the most surprising and terrific part of the meal was desert. I have to highly recommend the ChocoFlan! Super yummy, Wow

I walked into El Koritas in Castle Rock, CO for a quick bite. The owner's family was watching TV and eating lunch. Immediately a very nice gentleman approached me and took my order. I ordered a burrito without meat and he was very accommodating. My wait was filled shopping through the fun little grocery area. After about 15 minutes, my order came and it was huge! I only ordered a vegetarian burrito. When I got to my car and opened the tray, I saw the most beautiful presentation for take out I've ever seen. The burrto was topped with green salsa and a bit of red salsa. The colors were so pretty. . When I dug into it with my fork , I saw something different than other burritos I've had. They created it with carrots, broccoli, and cauliflower among other veggies. The beans were not mashed, but whole and tender. My burrito became a mouth-watering surprise of wonderful Hispanic flavors. I ate the whole burrito! I will return to this place in my travels. Thank you for a great experience, El Korita!

Wife and I stopped in for lunch, we each got a burrito. Very fast, very good food. Big portions. We will be back again!

Order a carne asada torta NOW . . . this little mexican family grocery/mini-restaraunt place is no joke. Best I've had in a long long while (I'm from Arizona) and the chips and fresh salsa have some serious swerve! Enjoy some Telemundo while you wait . . .

Excellent hole in the wall for food and a Mexican style shop attached. The soft tacos with chicken were spiced enough to be flavourful, and the tamales tasted homemade.

Went back a second time and I think this is the best Mexican food in Colorado The rice and beans are the best I've had a chimichanga was delicious my wife recommends margaritas

Food was really good - pork tacos, chicken crispy tacos. Reasonably priced. Friendly service. Quirky set up.

We went based on the reviews, but we were really let down. Yes, it was a terribly unfortunate atmosphere. Service was friendly, but the food was subpar.

I work in Castle Rock and trying to grab a bite to eat is a challenge. I finally remembered this place and stopped in for lunch. The place was not busy and it was lunch time. I would have given them a 5 star but the restaurant isn't appealing, floors look like they could use a vacuum. I would call it a local dive, in this case it is a good thing. The person that waited on me was very nice. The chips and salsa was different and delicious. In all honesty I wouldn't know "authentic Mexican" if it bit me in the face but this appeared more authentic then most. I had the enchiladas and it was excellent. The chicken chunks were fantastic. I know I will come back for the food. Prices and portions are reasonable.

My wife and I grew up here in CO and moved to AZ for a few years and fortunately moved back here two years ago. The only thing we miss from AZ was the good Mexican food. All the other places nearby are not authentic. This place is the real deal. Their salsa actually has flavor to it. The prices are great. The only thing that I can think of that is holding the place back is the entrance and decor are not very inviting. The menu is a little goofy but you can order lunch items off the dinner menu and vice versa. The staff were very nice.
(5)Tim S.
Food was very good and price was very reasonable. I had the crispy relleno. It was tasty but pretty small. The good news is I ordered a couple pork tacos too. Those were great. The atmosphere is a bit bland but great food for a great price. I would definitely return. Service was very friendly too.

Easily my favorite place to dine out in Castle Rock. Authentic Mexican food that is served with a smile. Give it a try the next time you're in town - I'm sure you'll love it too!
(5)Sean M.
Homemade and authentic. This is what Mexican food should be, everything is homemade and delicious. I ordered two breakfast burritos and they were both freshly made as I waited. Lunch is excellent too. Its a bit of a hole in the wall, but if you enjoy authentic Mexican food, do yourself a favor and check it out!

This place is amazing, we were looking for some where we hadn't tried and took the kids to the library so we decided to try this place. The kids weren't to happy about this, but once they got their food they were very impressed. So were my husband and I. Everything we had was amazing

My family is new to the area so we yelped Mexican restaurants in the area and found this restaurant. I had the chili relleno plate, burrito and chicken tacos and each dish was filled with savory Mexican flavors! This place is not to miss and we will be back!! Oh, staff was amazing also!
(5)Julie M.
We eat here frequently, so recently I asked them to make food for a party at our house for about 15 people. They did an amazing job... Very fair price for an abundance of food, and they even provided a few vegetarian options. What a hit! Everyone is still raving about how great it was. Everything was fabulous. The tamales and rellinos were especially outstanding.

I come here whenever I go to Comcast store. it's delicious and they now have a little sit down area. I had the carne asada soft tacos yesterday and I am planning to go back again today. I crave it...The have little ambiance with Spanish TV playing, and that's the only reason I didn't give 5 stars. But it's clean, friendly and there is a tiny store where you can pick up dried chilis and spices. Oh and I love the salsa!
(4)Ben L.
The food here is excellent. The salsa has a wonderful flavor with quite a kick! The shrimp tostadas were fantastic and the carne asada was very flavorful. We both greatly enjoyed our meals. To top it off the staff is very friendly and provided excellent service.

I honestly can't recall ever eating a better vegetarian chimichanga. Maybe I have, but I don't remember when or where. If you have not tried this place, you are missing out.

Excellent service.. food is incredible.. i got the Al pastor tacos.. and wished I had 2 stomachs! So good. My new go to place for authentic mexican food!

A great find hidden in a strip mall in Castle Rock. Freshly made chips and salsa got us off to a good start. Fast, friendly service brought us our meals. The tacos were perfect - not your fast food or big chain tacos, these tasted closer to authentic. The tamales were also delicious, including the green chili smothering them. We ended with a good slice of flan. Just our kind of hole-in-the-wall place!
